Every summer my immediate family gets together for a week near some mountains and water. This summer it was Lake Tahoe and it was beyond perfect. I think the search is over, I would happily have this be our location for reunions each summer. Flawless.<br />
<br />
With the number of adults and kids (this time: 18) we have, it is almost never makes sense that we go out to eat. Luckily all the girls in the family enjoy cooking, so we take turns for each meal. (ok, my mom does MOST the work). I heavily document reunions with my camera and make notes in my phone so I can journal and blog later, and many of those photos and notes include the food---it's just that important to us. :-)<br />
<br />
I'm documenting it here because you may find it helpful to see what our meals look like for a week with a big group.<br />

For our family reunion this summer we had acai bowls with Nova Granola twice. Each time was a hit. They are fast, easy, and simple to make and everybody is happy. No real recipe to follow, but play around with measurements till you get the consistency you want. To make it "acai" you should get the frozen packets from Whole Foods.<br />

I used Green Kitchen Stories recipe for <a href="http://www.greenkitchenstories.com/fat-almond-pancake/">Fat Almond Pancakes</a>. Think German Pancake or Dutch Baby. I promise, this healthified version is just as good. (my brother-in-law is going to roll his eyes at me for saying that)<br />
<br />
The recipe calls for buckwheat flour but I subbed fresh ground wheat flour and it tasted just great.<br />
<br />
I topped mine with powdered sugar and strawberries and I didn't need any syrup at all. Probably because there was some syrup in the batter and it was perfectly sweet.<br />
<br />
In other news. I got an ipad and it makes cooking and baking THAT much better. Spotify and podcasts and pinterest right at hand. <br />

I've only had them a few times, but never made them myself. Egan and I decided to give them a try for Sunday dinner. I really loved the combination of flavors. (mint, sriracha, basil, pickled mango/radish/carrots, marinated tofu, lime, cucumbers) It was an easy meal and they were so good.<br />

We made pancakes one morning while I was visiting my twin sister in California and she didn't have any syrup. No problem, I warmed up some frozen berries, gave them a mashing, and drizzled some honey to sweeten it up.<br />

Healthy Wholewheat Pancakes <br />
<span style="font-size: x-small;">adapted from Favorites cookbook </span><br />
1 cup wholewheat flour (I used freshly ground)<br />
2 teaspoons baking powder<br />
1 tablespoon sucanat<br />
1/2 teaspoon real salt<br />
1 cup almond milk<br />
1 egg<br />
2 tablespoons unsweetened applesauce<br />

Combine all ingredients and mix. I really love how angel food cake is super easy to make look pretty. Taking a big slice of angel food cake and with a scoop of strawberries and a large dollop of whipped cream it is presentable and delicious. Nothing tricky to it. <br />

She has a fully stocked kitchen, great lighting, and all the great kitchen tools. I love how adventurous she is in the kitchen, pretty much never makes the same meal twice. While we were at <a href="http://www.novagranola.com/2013/03/a-trip-to-market.html">Pike Place Marke</a>t we over heard a lady saying she likes to cook her artichokes in the pressure cooker. We were intrigued and had to try.<br />
<br />
This is what we did:<br />
Snip off all the pointy tips from the artichoke leaves. Place in a normal size pressure cooker with a little salt, a cut up lemon, and fill with water about half way up. Put lid on and turn on to high until pressure cooker lid starts to rattle. Turn down and continue to cook for 15 minutes. Take the pot over to the sink and run cold water over the pressure cooker until the valve goes down. Serve with a little melted butter and olive oil to dip in.<br />
Normally it would take 45-60 minutes to cook an artichoke in a regular pot, but with a pressure cooker it took only 25 minutes. Wonderful!<br />
<br />
Another side dish we tried was mashed cauliflower.<br />
Here's what we did:<br />
Cut cauliflower in florets and steam in a large pot. Once the cauliflower is tender drain the water and mash the cauliflower. We added some cream cheese and mashed until combined. Salt and pepper to liking. <br />

Every time I make a trip home to Seattle, I visit Pike Place Market. This latest trip home was no exception. My mom and I stopped by the market on Friday to pick up some produce for Easter dinner. We walk the whole market every time and always have to share a "half dozen assorted" mini donuts from our favorite stand.<br />

1 cup plus 2 tablespoons rolled oats<br />
1/3 cup chopped walnuts<br />
1 cup whole wheat flour<br />
1/3 cup flaxseeds, ground<br />
2 teaspoons baking powder<br />
1/2 teaspoon baking soda<br />
1/4 teaspoon salt<br />
2 large eggs<br />
1/3 cup packed light brown sugar<br />
3/4 cup buttermilk (or almond milk plus 1/4 of a lemon, squeezed)<br />
1/2 cup applesauce<br />
1 teaspoon vanilla <br />
3/4 cup chopped, pitted dates<br />
1/3 cup chocolate chips or more <br />
<br />
Preheat oven to 400.<br />
In a small toaster oven, I toasted the cup of rolled oats and walnuts for 6 minutes or so. Let cool.<br />
<br />
Whisk whole wheat flour, ground flaxseeds, baking powder, baking soda, and salt in a medium bowl.<br />
<br />
Whisk eggs and brown sugar in a small bowl till smooth. Whisk in buttermilk (or substitute), applesauce, and vanilla. Add to the dry ingredients until incorporated. Fold in dates, oats, walnuts, and chocolate chips.<br />
<br />
Once in muffins tins, sprinkle with the 2 tablespoons oats. Bake for 15-20 minutes or golden brown.<br />

On Sunday morning we had a sister breakfast at my place cause Kristine was in town. I made these waffles and they were so good I had to share. I love that they are flour less, I love the soaking aspect, and I loved having a leftover waffle for breakfast the next morning. I bet they would freeze great.<br />

My oldest sister and I had a pancake party the other day. And by party, I mean just us two. This pancake recipe is probably the most commonly made and loved breakfast recipe we have in our family. Great texture taste. We put blueberries in these, but of course you can do without or add what you like. Topped with pure maple syrup, of course.<br />

Oatmeal Pancakes<br />
yields about 12<br />
<br />
2 cups quick oats<br />
1/2 cup whole wheat flour<br />
2 tablespoons sugar<br />
1 teaspoon baking soda<br />
1 teaspoon baking powder<br />
1/2 teaspoon real salt<br />
2 1/2 cups buttermilk<br />
2 large eggs slightly beaten<br />
1/4 cup butter melted and cooled<br />
1 teaspoon vanilla<br />
<br />Combine dry ingredients. Add wet ingredients and let sit for 20 to 30 minutes, covered*.<br />
Cook slowly on a griddle at 325 degrees.<br />
<br />
*The key here is letting the oats soak up all the wet ingredients. Whole Wheat Bread<br />
adapted from <a href="http://www.wordofwisdomliving.com/">Word of Wisdom Living</a><br />
yields single loaf<br />
<br />
1 1/4 cup warm filtered water<br />
1 package yeast (2 1/2 teaspoons)<br />
1 1/2 teaspoons sea salt<br />
1/4 cup honey (I used raw honey)<br />
1/4 cup canola oil<br />
3 cups whole grain flour*<br />
<br />
Combine ingredients in order and mix. Knead 5-8 minutes by mixer using a dough hook. If dough doesn't pull away from bowl and is still sticky then add a little flour. Flatten ball on an oiled and floured surface to work the dough into a rectangle. Roll the dough into a log nearly the length of the baking pan. Bend the ends under to make a neat loaf. Place dough log in a greased pan and let rise in a warm place for 1-2 hours. Dough should rise above pan.<br />
Bake at 350 degrees for 30 minutes or until top is golden brown.<br />
<br />
*I highly suggest using fresh ground flour. Luckily my sister has a wheat grinder and I was able to grind a bag full of wheat and store it in my freezer. Sunday dinner is always a good thing. I was just helper in the kitchen on this one so I asked my mom to describe what she did. This dinner spread is a common one for our family on a Sunday or such, but for some reason this particular meal was so delicious and amazing and perfect.<br />

Here's what my mom did:<br />

Salmon: Spread a little olive oil on the top and bottom, place on parchment.
Sprinkle with a salmon rub (I use a blend from Costco, but I have made
my own before...super easy). Bake at 400 degrees, but check often.
Don't overcook salmon! Time depends on thickness and size of your
salmon.<br />

Asparagus: Wash thoroughly and break off white ends---at least a couple
of inches but where it naturally wants to break off, try it, you'll see
what I mean. Drizzle lightly with olive oil and place on a single
layer of a baking sheet (I always cover my baking sheets with
parchment). Sprinkle with coarse sea salt and roast for about 8 minutes
at 400 -425 degrees. You can put it in with the salmon or do it right after the
salmon is cooked.<br />

Potatoes: Wash, place in a saucepan with an inch or two of water and a
little salt. Bring to a boil, then turn heat down to about medium and
put a lid on. If potatoes are small, they won't take much time to
be "fork tender", maybe 6 minutes. drain water, add 1 tablespoon or two of butter
and a grind of pepper and a little coarse salt and boom goes the
dynamite!<br />

Citrus Salad: Cutting the citrus fruits and placing in a bowl while the greens are prepared helps some of the liquid drain off. Once the greens are ready lay the citrus out and it won't get so soggy.
