Dessert // Angel Food Cake

It's my favorite spring dessert---Angel Food Cake. I've only made it once, but that's because Whole Foods or Costco sells such delicious ones. I really oughta make it again though, just for fun.

We had this for Easter dessert and it's an easy and light way to end a meal.

I really love how angel food cake is super easy to make look pretty. Taking a big slice of angel food cake and with a scoop of strawberries and a large dollop of whipped cream it is presentable and delicious. Nothing tricky to it.

apple crust-less pie

I met my family for dinner on a Saturday night and decided a crust-less apple pie would do. I just did this. I recommend some ice cream or whipped cream on the side. I also would have liked some crunch on top, but then it would have been more like a crisp and less like a pie. But who writes the rules anyway?

On Tuesday night my friend Nate came over and I made him some popsicles and we sat on the stoop. Three cheers for warm Utah summer nights! (almost summer I should say)

Night Treat

Back in August I threw a bridal shower for one of my best friends. It was in my sister's backyard and you can see more of the details to the party HERE.

Maybe it's the season change or maybe it's cause I just really like treats, but I've been in the mood for this dessert:

Birthday Cake

I made the Oatmeal Cake for mom's 60th birthday.
It's so light and the texture is amazing.
Give me berries and whipped cream for dessert every time.

*i used a flower shaped silicone "pan" to bake the cake in. cool shape, perfect slices.

Recipe: Oatmeal Cake

1 1/4 cups boiling water
1 cup oats (quick or rolled)
1/4 cup butter softened
1/2 cup applesauce
1 cup dates pureed with a little hot water
1/4 cup evaporated cane juice (or succanat)
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 1/2 cups whole grain flour (from the wheat I ground at my sisters)

Pour the boiling water over the oats and let stand for 20 minutes

Preheat oven to 350 degrees and lightly grease a pan (this time I chose a 9 inch round, but I usually do a 9x13)

Cream the butter, applesauce, evaporated cane juice, and pureed dates. Beat in the egg. Then add the oat mixture and vanilla, mixing well.

Combine the baking soda, salt, cinnamon, and flour. Add this to the oatmeal mixture and stir to combine. Pour the batter into the prepared pan.

Bake for 25-30 minutes, until tester comes clean.

Slice and top with whipped cream and fresh or frozen berries.

*This is a cake I've always loved of my moms. It's a perfect after dinner dessert with company because it's not to rich or heavy and pretty with the whipped cream and berries. I wanted to bring a dessert to dinner with friends this week, and decided on this cake. I knew I wanted to adjust the original recipe and the substitutions I made turned out to be a success so I made it again for Sunday dinner at my sisters. Dates pureed with a little hot water in a food processor is an easy way to substitute sugar and doesn't take out the sweetness of the dessert. Dates are so sweet! Applesauce is the easy go-to for oil/butter in baked recipes and only adds to the desired moistness. I suppose you could play around with different flours too. Lots you do with this basic recipe.
