Recipe: Raw Energy Balls


Raw Energy Balls

12 pitted dried dates
1/4 cup cashews
1/4 cup almonds
1/2 cup rolled oats
1 tbsp vanilla
1 tbsp honey (or you could use maple syrup)
1/4 tsp sea salt
1/4 tsp cinnamon
1 tbsp raw cacao nibs

Blend all of the ingredients except for the cacao nibs in a food processor. Once it is finely chopped and very sticky add the cacoa nibs and stir. Roll into 12 balls. Keep in refrigerator for 1-2 weeks.

These are the perfect pre or post workout snack. You'll be surprised how much power is packed in that sticky, sweet little ball. It's completely satisfying. They are quite filling too, so you could add one to your lunch or bring it to work for a snack. I bet kids would like them too.

Did you know I got a food processor for my birthday? Thanks Mom and Dad! I've been day dreaming about owning one for years. So far I've made 2 things: homemade lara bars and these raw energy bars.

Granola, Man


My sister ordered some granola for her father-in-law for Father's Day!
She lives in California, so I wrapped and delivered to him here in Utah.

I used Creature Comfort's adorable tags to tie on to the bags.
I love her printables, I just wanna make stuff for people for no reason cause it's so rad looking.

Summer means Salads


Reading that got me excited about salads again and how easy they are to throw together.

Every weekend I stock my refrigerator with greens (romaine, spinach, cilantro, arugula)
and a variety of things to chop on top (tomatoes, avocado, celery, cucumber, carrots, peppers).

I'll also prepare a protein like some canned beans (kidney, black, garbanzo), a hard boiled egg, or quinoa.

It's been lunches mostly, and I've yet to tire of the fresh salad especially as the days get hotter.

The above salad was one my mom and I made from Power Foods: endive, avocado, and red grapefruit salad. And it was as delicious as you'd think.

Have you ever....


Have you ever tried baked oatmeal for breakfast?
I've tried it 2 times. It's delicious and exciting.
I'm going to experiment some more.
Problem is...you need 30+ minutes and who has 30+ minutes for breakfast in the morning?
