Recipe: Goody, Goody Plum Drop

My mom and I decided to create our own cookie recipe.
Inspired from Trader Joe's Cherry Granola Cookies + Prune Cookies (that my mom had previously invented) + Mt. Rainer Power Bar recipe
We created a gluten free and dairy free cookie with natural ingredients and wholesome goodness. Are you ready for something delicious?

cashews and pecans

and prunes, applesauce, oats, sucanat, brown rice syrup, coconut oil, coconut flour, baking powder, baking soda, salt

let the food processor purrr

stir a little with dried cherries, raisins, and coconut

375 degrees

flatten with a glass dipped in water

bake for 12 minutes

A Gluten and Dairy Free cookie

Preheat oven to 375 degrees.

1 Cup Pecans, finely chopped
1 Cup raw Cashews, finely chopped
½ cup dried cherries, slightly chopped
½ cup raisins, slightly chopped
1 Cup ground dried plums (prunes)
1 tsp. baking powder
1 tsp. baking soda
2 Tbs. coconut flour
½ tsp. salt
3/4 cup applesauce
1 Tbs. Coconut oil
cup brown rice syrup
½ cup sucanat or other cane sugar
1 ½ cups rolled oats
cup coconut

In a food processor chop pecans and cashews. Set aside. Slightly chop the cherries and raisins. Set aside. Grind dried plums.
To the plums add the baking powder, baking soda, salt, applesauce, coconut oil, brown rice syrup and sucanat. Mix together.

In a large bowl mix all the ingredients together. Drop by spoonful and sprayed or parchment lined baking sheets. Flatten each cookie slightly, using the bottom of a glass--dipping the glass in a bowl of water every once in a while. Bake for about 12 minutes. Cool on racks.
