I did this one morning and then I repeated it the rest of the week cause it was TOO good, no other breakfast would do. Give it a go.

Recipe: (for 1 person)
makes about 4 crepes
makes about 4 crepes
2 egg whites
1/4 cup almond milk
1/4 cup spelt flour
pinch of salt
pinch of sugar (use evaporated cane juice or succanat)
blend away
pour into an oiled pan and tilt pan to make a circle.
*think thin when it comes to crepes. you don't need a lot of batter.
toppings:
honey
lemon squeeze
berries (fresh or frozen)
yogurt
applesauce
Maybe you should listen to Fleetwood Mac "Rhiannon" too.

ReplyDeleteLogan is the Crepe Master at our house. He makes them almost every Saturday morning and they're thick. And white. With a heaping spoon of Nutella in the middle. Yikes!

wow sounds so healthy with hardly any flour, what is spelt flour???
ReplyDeleteI have been making these and get three per serving if I use 1/4 cup for each. Also, subbed one egg instead of using just egg whites.
