On Tuesday night my friend Nate came over and I made him some popsicles and we sat on the stoop. Three cheers for warm Utah summer nights! (almost summer I should say)

+and we dressed like twins on accident. but cool right?

summer hands

You should know I have a thing for hands, and a thing for summer. I love tan hands so much. Then double the magic when you put them to work by making something delicious. Riiiight?!

My friend Laura gives great nail polish tips over on her blog. I wish I could to a paint job like her.

How about this purple from Green Kitchen Stories. I think I should give purple a try once my hands are tan enough. It has to be a light purple though.

Do you like to paint your nails in the summer or just leave them natural?
I've always been a natural nail person in the summer cause it looks so clean and nice, but I'm tempted to paint them something colorful and bright. decisions.

strawberry rhubarb pancakes

As a renter I have not yet been able to have my own garden, but I am lucky enough to have two generous sisters that live close to me and garden. I came home with a bunch of rhubarb last Sunday that I had chopped and put in the freezer with thoughts of muffins in my head. But Sunday morning I woke up and I had one breakfast wish: Strawberry Rhubarb Pancakes. I'd never had them before, nor heard of them, so I used a pancake recipe I liked and simply added the chopped rhubarb and diced up strawberries. Easy, tasty, and in season.

Recipe//Strawberry Rhubarb Pancakes

1/2 cup oats
1/2 cup buttermilk (I used almond milk and 2 teaspoons apple cider vinegar)
3/4 cup almond milk
mix and set aside

1 egg
1 tbsp oil
add to oat mixture

1/2 wheat germ
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
drizzle of 100% pure maple syrup
dash of cinnamon
mix and add to oat+egg mixture

Pour 1/3 cup amounts onto a greased and hot skillet.

crepes for one

I did this one morning and then I repeated it the rest of the week cause it was TOO good, no other breakfast would do. Give it a go.
(do you like how it's more like a taco? more fillings da better)

Recipe: (for 1 person)
makes about 4 crepes

2 egg whites
1/4 cup almond milk
1/4 cup spelt flour
pinch of salt
pinch of sugar (use evaporated cane juice or succanat)

blend away
pour into an oiled pan and tilt pan to make a circle.

*think thin when it comes to crepes. you don't need a lot of batter.

toppings:
honey
lemon squeeze
berries (fresh or frozen)
yogurt
applesauce

Sometimes you just need a breakfast with your sisters on a week day.
And then a bonus of two little girls who are exceptionally adorable and one who let's me braid her hair every time I come and the other who's very serious and very scrumptious.
